Keeper's Diary is a reference to a file found in Resident Evil. In the context of the game, the file or diary was written by an Umbrella Researcher left in charge of taking care of the Arklay Laboratory's animals. It is a first hand account of a person slowly succumbing to the T-Virus. The final lines of the file read "Itchy. Tasty." concluding the keeper's transformation.

It's also my favorite file of the game. :{D
